Ingredients For chicken gumbo ya ya

4bone in chicken breasts
-
2celery ribs, with leaves
-
1carrot, left whole and ends removed

1medium onion, peeled and quartered

3bay leaves
-
3quarts of water
-
1teaspoon of salt
-
1bag of frozen unbreaded okra
-
1 1/2 cchopped onion
-
1 1/2 cchopped celery
-
1 1/2 cchopped carrot
-
2bay leaves, dried
-
3/4 tspground thyme
-
1/2 tspmarjoram, dried
-
1/2 tspbasil
-
2 can16 oz petite diced tomatoes
-
salt to taste
-
pepper to taste
-
cayenne to taste
-
32 ozcontainer of chicken broth
-
4 Tbspcloves of minced garlic
-
2 Tbspfile powder
-
1 1/2cups of rice cooked following package directions
How To Make chicken gumbo ya ya

1Place the chicken in 3 quarts of water and add all ingredients down to the first salt ingredient. Simmer until the chicken is done (about 30 mins). Remove the chicken and place the bones back in the pot, continue to simmer for another 45 mins.Skim the top for foam.

2Remove the onion, celery and carrot, then place all other ingredients except the okra and rice in the pot after you remove the bones. Simmer for 1 hour, then put the okra in and simmer for 15 more mins. You can also add more of the spices to your taste at this point.

3Cook the rice following package directions while the soup is simmering and set aside.

4When the soup is done, place 1/2 cup cooked rice in the bottom of a serving bowl with the gumbo on top. Serve with garlic bread. Enjoy
