My son loves this....On Hoildays we all bring a dish. He always asks for this chicken and I have to make batches of it. I also serve it over rice, the rice mixed with the gravy is great

Ingredients For chicken franchaise ala marion

  • 6
    chicken breast filets
  • 3
    eggs
  • 1 c
    all purpose flour
  • 1 1/2 c
    wesson oil
  • 8 clove
    garlic (thinly sliced)
  • 1 stick
    butter
  • 1 can
    chicken broth
  • 5 Tbsp
    lemon juice concentrate
  • 1 Tbsp
    corn starch (optional)

How To Make chicken franchaise ala marion

    Put the Flour in a bowl set aside. Put eggs in a bowl and scramble well set aside. Put oil in a large fry pan and heat on low add garlic. While garlic is cooking dredge chicken in flour then in egg. As you do each piece add to fry pan. Saute chicken for 1 or 2 minutes on each side, do not allow to get brown. Check to see if chicken is done and remove from pan and place on platter along with all the pieces of garlic.In another large fry pan melt butter (you may use the same frying but you must disguard all the oil and wipe with a paper towel) When butter is melted add the chicken broth and the lemon juice. Return the chicken to the frying pan along with the juices from the chicken and the pieces of garlic. Allow to simmer aprox. 5 minutes. Gravy should start to thicken. If you prefer the gravy to be thicker add some corn starch (1 TBS) to a little water and add to gravy
