This was our Saturday meal. I used only two large chicken breasts and it was more than enough for two adults. The veggies were already in the fridge. Enjoy!

Ingredients For chicken fingers with a side

6boneless chicken skinless chicken breast

1egg, slightly beaten

1 cbuttermilk

1 1/2 tspgarlic powder

1 call purpose flour
-
1 cseasoned bread crumbs or panko

1 tspsalt
-
1 tspbaking powder

oil for frying

basket mushroom, med onion, green and yellow peppers, sir fry
How To Make chicken fingers with a side

1cut the chicken into 1/2 inch strips; in a large resealable plastic bag, combine the egg, buttermilk and garlic powder; add chicken. Seal bag and turn to coat; refrigerate for 2 to 4 hours.

2drain and discard marinade. In another large resealable plastic bag; combine the flour, bread crumbs, salt and baking powder; add chicken. Seal bag and toss to coat.

3In an electric skillet, heat oil to 375, or any nice frying skillet or fry daddy. Fry the chicken in batches for 4-5 minutes or until golden brown on both sides. Drain on paper towels.

4In separate skillet using a little butter, stir fry the mushroom, onion and peppers with a little seasoning. Serve with chicken
