I went to a local family owned shop called Badurik Butcher Block and bought several cuts of meat along with some hot Italian sausage that my husband always requests that I get. Well, when I got home it wasn't hot sausage but Chicken Feta Spinach Sausage that I didn't know what to do with. It is not something I would have even bought. Well, I was pleasingly surprised at how tasty this sausage is and that my husband Anthony and nephew Rhyan really enjoyed it as well. From now on, I can add this healthier version of sausage to our dinner recipes as it is delicious.

Ingredients For chicken feta spinach sausage with pasta

4chicken feta spinach sausage links

1/2 mdyellow onion, minced

4 mdgarlic cloves, minced

1 1/2 Tbspvegetable oil

1 boxsmall pasta shells
- SPICY SAUCE:

1 canpetite diced tomatoes w/green chilies 14.5 oz.

1 cantomato paste 6 oz.

2 tspbasil

1 Tbsptone's spicy spaghetti seasoning (includes salt, dehydrated onion, spices, dehydrated red and green bell pepper, sugar, parsley, dehydrated garlic, red pepper.) ----bought this at sam's club

- NON-SPICY SAUCE:

1 tspbasil

1 cfresh mild salsa
-
1/2 can(hunt's) whole plum tomatoes w/basil
- TOPPINGS FOR PASTA

parmesan cheese

3 Tbspfresh parsley, chopped
- CREAMY VERSION
-
1/2 - 3/4 csour cream
How To Make chicken feta spinach sausage with pasta

1Saute onion for 5 - 7 minutes and add garlic. Then saute for 2 to 3 more minutes. Remove the casing from the sausage and place the sausage in with onions and garlic. Cook on a medium heat.

2Cook your pasta while preparing sauce. Prepare spicy hot sauce: 1 can petite diced tomatoes with green chilies 14.5 oz., 1 can tomato paste 6 oz. 2 tsp. basil, 1 tbsp. Tone's spicy spaghetti seasoning, 1 tbsp sugar. Non-Spicy Sauce: 1/2 can of whole plum tomatoes w/basil cut up, 1 cup of fresh salsa and a tsp of basil.

3Add sausage mixture to pasta.

4Finish with sauces, parmesan cheese and fresh parsley on top.

5Ready to eat.

6June 5th, 2014 --- Decided to make this dish a little different and added 1/2 - 3/4 cup sour cream. Gave it a creaminess and lightened up the tomato flavor...very tasty this way as well.
