chicken fajitas

I created this recipe years ago, before most people ever heard of the word "fajita". It is easy to make and really a treat for the family. Everyone loves the flavor of this simple meal, which can have a salad for a side dish. Give it try and let me know what you think. As always, my taste tends to have stronger spice than most people, so beware and taste your own as you make this dish.

Ingredients For chicken fajitas

  • 1 pkg
    wheat flour tortillas or tomato, spinach toritllas
  • 4
    pieces of chicken breasts, no skin or bone
  • 1 pkg
    fajita seasoning
  • 1
    chopped onion
  • 1 tsp
    sea/kosher salt
  • 1 c
    chopped green bell pepper
  • 1 c
    chopped red bell pepper
  • 1/4 c
    chopped seedless jalapeno peppers
  • 2 can
    chopped cabbage
  • 2 c
    grated monterey jack cheese
  • 3 Tbsp
    butter
  • 1 pt
    salsa of choice
  • 1 pt
    sour cream
  • guacamole to taste

How To Make chicken fajitas

    Wash the chicken breasts and place in boiling water to cook about 15 minutes. Chop up into strips when done and add to cast iron skillet which has been pam sprayed. Add the butter so it will add flavor. Stir every few minutes so it won't burn until meat is done and brown.

    While chicken is cooking, chop up the vegetables and place in the skillet with the chicken while it is cooking. Keep stiring once in while to get the veggies cooked and soft. Make sure the cabbage is nice and soft and coated with the butter you added. Is a great flavor with the other ingredients.

    Add the fajita seasoning and the salt. Stir and mix well to coat all the meat and veggies. Cook until well heated through and turn off the heat.

    Take the tortilla and place a couple of large spoonfuls of the meat mixture in the center and spread it long ways. Don't leave a lump of meat in the center. Add the sour cream, guacamole and then the cheese. If desired add the salsa. I make my own so it is fresh and really terrific. Bent in the sides and roll the tortilla up.

    Can serve with refried beans and rice if desired or just by itself. Either way, it is a nice meal that all will enjoy.
