Ingredients For chicken enchiladas

  • 4
    chicken breasts, boneless and skinless. cooked and chopped
  • 1 1/2 stick
    butter/ i use less. just enough to saute them
  • 2
    onions, chopped
  • 11 oz
    cream cheese, room temperature
  • 1 can
    chopped green chili pepper's
  • 1 pkg
    flour tortillas
  • 1 lb
    monterey jack cheese
  • 1c c
    whipping cream/just enough to cover tortillas
  • black olives,tomatoes & green onions to garnish

How To Make chicken enchiladas

  • 1
    Saute onions in butter till they are clesr
  • 2
    Add cream cheese & peppers mix and add chicken.

    Place 2 to 3 tbsp of chicken mixture in tortillas, roll and place in 9x13 bakiing dish. Pour whipping cream over the rolled tortilas cover with Monterey Jack cheese. Bake @ 350 for 20 to 30 minutes

    Garnish with chopped black olives tomoatoes and green onion.. I also have salsa and sour cream if any one wants to add that to their dish.. Great the next day ..
