Ingredients For chicken enchiladas

4chicken breasts, boneless and skinless. cooked and chopped

1 1/2 stickbutter/ i use less. just enough to saute them

2onions, chopped

11 ozcream cheese, room temperature

1 canchopped green chili pepper's

1 pkgflour tortillas
-
1 lbmonterey jack cheese
-
1c cwhipping cream/just enough to cover tortillas
-
black olives,tomatoes & green onions to garnish
How To Make chicken enchiladas

1Saute onions in butter till they are clesr

2Add cream cheese & peppers mix and add chicken.

3Place 2 to 3 tbsp of chicken mixture in tortillas, roll and place in 9x13 bakiing dish. Pour whipping cream over the rolled tortilas cover with Monterey Jack cheese. Bake @ 350 for 20 to 30 minutes

4Garnish with chopped black olives tomoatoes and green onion.. I also have salsa and sour cream if any one wants to add that to their dish.. Great the next day ..
