If you have ever tried Chili's Chicken Enchilada Soup, let me just say LUCKY YOU! It is fabulous! I created my own version. It's a pretty close imitation and only took about 15 minutes, start to finish!

Ingredients For chicken enchilada soup (quick)

  • 2 can
    campbells' cream of chicken soup
  • 2 can
    campbell's fiesta nacho cheese soup
  • 1-2 can
    water
  • 2 tsp
    chili powder
  • 1/2 tsp
    onion powder
  • 1 tsp
    ground cumin
  • 1/4 tsp
    garlic powder
  • 1-12 oz can
    chunk white chicken
  • 1 c
    grated cheddar cheese
  • 1 c
    crispy tri-color tortilla strips

How To Make chicken enchilada soup (quick)

    Open all 4 cans of soup and combine in a large pot. Add water to the consistency that you like. Heat over medium heat.

    Add all the seasonings and stir to mix well. Stir in the chicken. Heat thoroughly.

    Ladle into bowls. Sprinkle grated cheese and tortilla strips on top and serve hot.
