I learned to make crepes when we lived in Belgium, mostly the dessert type. This is Grandma W's savory crepes recipe with chicken, and it is absolutely delicious!

2/3 cflour

3 Tbspmelted butter, cooled

1/8 tspsalt

1/4 cbutter

3/4 lbmushrooms, chopped

1/2 cgreen onion, chopped

2 1/2 ccooked chicken, diced

1/2 csherry

1/2 tspsalt

1/4 cflour

10 3/4 ozchicken broth, condensed

2 clight cream
-
1/2 tspsalt

How To Make chicken crepes, grandma w

1BATTER: Combine 2/3 c flour, eggs, cooled butter, salt and 1/2 c milk and beat smooth. Add rest of milk, beat smooth. Cover and refrigerate overnight.

2FILLING: Heat 1/4 c butter in skillet, add mushrooms and onion and saute 10 min. Add chicken, 1/2 c sherry, salt and pepper. High heat until liquid is gone.

3SAUCE: Bring to boil over med heat all but oil and cheese. Stir, simmer 2 min. Add half the sauce to chicken and set aside.

4Cook crepes in 7" skillet brushed lightly with oil. Pour in 2 T batter, rotate to cover bottom. Cook med-golden, flip and cook other side. Cool. repeat.

5Oven to 425 degrees. Place 1/4 c filling on each crepe, roll and arrange seam down in shallow, buttered baking dish. Cover with sauce and sprinkle with swiss cheese. Bake 15 min or until bubbly.
