I love chicken cordon bleu and this version is wonderful since pineapple goes well with both chicken and ham. Enjoy!

Ingredients For chicken cordon bleu with pineapple slices

1 can8 oz. can pineapple slices

2boneless, skinless chicken breast halves

2 Tbspflour

1/2 tsponion salt

1 Tbspbutter

2 slicethin slices deli ham
- CHEDDAR CHEESE SAUCE

1 Tbspflour

1 Tbspbutter

1 cmilk

1/4 cfinely grated sharp cheddar cheese

salt and pepper
How To Make chicken cordon bleu with pineapple slices

1With a meat mallet, pound the chicken breasts to a 1/2 inch thickness. Combine flour with onion salt and dredge chicken to coat both sides.

2Melt butter in a non-stick skillet and cook chicken (on each side) about 10 minutes total.

3Top each chicken slice with a ham slice and continue cooking until ham is heated through. Remove chicken to a plate.

4Heat pineapple slices until heated through. Top each piece of chicken with 2 pineapple slices and top with cheese sauce.

5In a small saucepan, melt butter and flour and stir to allow mixture to bubble up - then remove pan from heat. Add milk and whisk over low heat until smooth and slightly thick. Add cheese and stir to melt. When melted completely - spoon over chicken breasts.
