I love the crispiness of this Chicken Cordon Bleu recipe. The flavors melt in your mouth and are simply divine. Makes a very nice but easy and impressive dinner for guests. Pairs well with Roasted Parmesan Sting Beans.

Ingredients For chicken cordon bleu

  • 6
    boneless skinless chicken thighs
  • 6 slice
    swiss cheese
  • 8 slice
    deli ham (cooked, thinly sliced)
  • 1 c
    grated parmesan cheese
  • 2 Tbsp
    italian seasoning
  • 1 Tbsp
    ghee

How To Make chicken cordon bleu

    Preheat oven to 350.
  • 2
    Pound chicken thighs flat. Place 1 slice of cheese and 1 slice of ham on each thigh and roll. Secure in place with a toothpick.

    Combine parmesan and Italian seasoning in a bowl. Roll each thigh, coating on all sides.

    Heat ghee in a pan over medium-high heat. When hot, place chicken rolls in the skillet and cook until browned, about 4 minutes. Turn the roll and cook another 2 minutes, continue turning and cooking 2 minutes until the entire roll is browned.

    Put the rolls in a lightly sprayed baking dish and bake for 15 minutes (or until heath thermometer reads 165 degrees). Note: When I'm in a hurry (or just want fewer dishes to clean), I skip the baking dish and use a cast iron pan for both the stop top cooking and the baking. If you want that extra crispy beautifully golden brown look use a non-stick pan and then transfer to a backing dish.
