215 oz cans coconut milk

How To Make chicken coconut curry noodle bowl

1cook the rice noodles according to directions on package. drain and set aside.

2Add olive oil to large pot. Add the chicken and cook until browned. Add the onion, red bell pepper, and carrots. Cook until softened. Add the ginger and garlic. Stir in the red curry paste.

3Add the chicken stock and coconut milk. Simmer for 10 minutes. Taste and adjust for salt. Serve over rice and garnish with red onion and cilantro.
