Ingredients For chicken coconut curry noodle bowl

  • 8 ml
    rice noodles
  • 1 lb
    chicken breast cut into small pieces
  • 2 Tbsp
    olive oil
  • 1 sm
    onion chopped
  • 1 lg
    red bell pepper chopped
  • 1 lg
    carrot julienned
  • 6 clove
    garlic minced
  • 3 Tbsp
    red curry paste
  • 2
    15 oz cans coconut milk
  • 1 c
    chicken broth
  • 1 tsp
    ginger grated
  • 1/4 c
    brown sugar
  • salt to taste
  • cilantro and sliced red onion for garnish

How To Make chicken coconut curry noodle bowl

  • 1
    cook the rice noodles according to directions on package. drain and set aside.

    Add olive oil to large pot. Add the chicken and cook until browned. Add the onion, red bell pepper, and carrots. Cook until softened. Add the ginger and garlic. Stir in the red curry paste.

    Add the chicken stock and coconut milk. Simmer for 10 minutes. Taste and adjust for salt. Serve over rice and garnish with red onion and cilantro.
