I discovered this recipe a few years ago and it is a family favorite. You may use wine or buttermilk to suit your families taste. My husband prefers wine and the children like it with buttermilk. I like it BOTH ways!

Ingredients For chicken cobbler

6 Tbspbutter, melted

4 csourdough bread cubed

1/3 cgrated parmesan cheese

2 Tbspchopped parsley

2 mdsweet onion thinly sliced

1 oz8 oz mushrooms, fresh

1 cwine or buttermilk
-
1 cancream of mushroom soup
-
1/2 cdrained and chopped jarred roasted red peppers

2 1/2 cshredded cooked chicken
How To Make chicken cobbler

1Toss 4 Tbsp melted butter with next 3 ingredients; set aside

2Saute onions in the remaining 2 tbsp butter over medium high heat about 15 minutes or until golden brown, add mushrooms and saute another 5 minutes.

3Stir in wine OR buttermilk and next 3 ingredients cook 5 minutes or until bubbly. Spoon mixture into a 9 inch or 11 x 7 inch lightly greased dish. Top with bread crumbs.

4Bake at 400 degrees for 15 minutes or until golden brown.
