My recipe is a colorful and easy to prepare meal, especially if you cut the ingredients ahead of time, as it cooks quickly and can be on the table in about ten or fifteen minutes. This is great served over Chinese noodles which are crispy. A little extra soy sauce may be served at the table if desired.

Ingredients For chicken chow mein

  • 1/2
    chicken breast, sliced
  • 2 Tbsp
    cornstarch
  • 2 Tbsp
    grapeseed oil
  • 2 c
    sliced celery
  • 1 sm
    bunch scallions, white and part of green stalk sliced
  • 1 c
    diced shitake or/white button mushrooms
  • 1 tsp
    minced garlic
  • 1 dash
    red pepper flakes
  • 1 sm
    chunk of peeled, fresh ginger, grated
  • 1 can
    14 ounces low salt chicken broth
  • 1 c
    broccoli florets or red bell pepper diced
  • 1 lg
    fresh carrot, sliced very thin
  • 1 Tbsp
    light soy sauce
  • 1 pkg
    chinese noodles
  • WASH, SLICE, DICE VEGETABLES, AND GRATE FRESH GINGER

How To Make chicken chow mein

  • 1
    Over medium heat, in a large skillet or a wok, heat the oil. When it is shimmering add chicken and stir to coat with oil and brown on all sides.

    Add vegetables, garlic, ginger and cook until tender or a little crunchy.

    Mix broth and cornstarch together and stir into chicken and vegetables and stir until thickened.

    Add seasonings and simmer gently just a couple of minutes.
