chicken chow mein
My recipe is a colorful and easy to prepare meal, especially if you cut the ingredients ahead of time, as it cooks quickly and can be on the table in about ten or fifteen minutes. This is great served over Chinese noodles which are crispy. A little extra soy sauce may be served at the table if desired.

1/2chicken breast, sliced

2 Tbspcornstarch

2 Tbspgrapeseed oil

2 csliced celery

1 smbunch scallions, white and part of green stalk sliced

1 cdiced shitake or/white button mushrooms

1 tspminced garlic
-
1 dashred pepper flakes
-
1 smchunk of peeled, fresh ginger, grated

1 can14 ounces low salt chicken broth
-
1 cbroccoli florets or red bell pepper diced

1 lgfresh carrot, sliced very thin
-
1 Tbsplight soy sauce
-
1 pkgchinese noodles
- WASH, SLICE, DICE VEGETABLES, AND GRATE FRESH GINGER
How To Make chicken chow mein

1Over medium heat, in a large skillet or a wok, heat the oil. When it is shimmering add chicken and stir to coat with oil and brown on all sides.

2Add vegetables, garlic, ginger and cook until tender or a little crunchy.

3Mix broth and cornstarch together and stir into chicken and vegetables and stir until thickened.

4Add seasonings and simmer gently just a couple of minutes.
