A meal that is quick and easy to put together. When I steam rice, I usually make a large quantity and freeze it so it's ready to go. You can also substitute beef tenderloin and beef broth for this recipe. It can also easily be doubled.

Ingredients For chicken chow mein

  • 4 tsp
    corn starch
  • 1 tsp
    sugar
  • 4 tsp
    soy sauce
  • 1
    garlic clove, minced
  • 1/2 lb
    chicken breast, cut into thin strips
  • 1 Tbsp
    canola oil
  • 2 c
    uncooked vegetables-carrots, green pepper, broccoli, celery, green onions
  • 1/3 c
    chicken broth
  • hot cooked rice
  • chow mein noodles

How To Make chicken chow mein

    In a bowl, combine cornstarch, sugar, soy sauce and garlic. Add the chicken and toss to coat.

    In a large skillet or wok, stir fry the chicken in hot oil until no longer pink; remove and keep warm.

    Reduce heat to medium. Add the vegetables and broth; stir fry for 4 minutes.

    Return chicken to pan. Cook and stir for 2 minutes or until heated through. Serve over rice and top with chow mein noodles.
