Great for a chilly day over seas! Simple and easy to find ingredients. Makes you feel like you're home when you're 1000s of miles away!...currently posting this from a stint abroad(in Japan). Hope you all enjoy!

Ingredients For chicken chili

1 1/2 conion (chopped)

3/4 cgreen and/or red bell pepper (chopped)

2 clovegarlic (minced)

2 Tbspvegetable oil

1 1/2 - 2 lbchicken breast (cubed)

1 Tbspchili powder
-
1 1/2 tspcumin
-
1/4 tspcayenne pepper (1/2 if you like it spicy)

1 tspground coriander
-
1/2 tspsalt
-
1 candiced tomatoes (with liquid) 14.5oz

1 cantomato paste 6oz
-
1 canchicken broth 10.5oz
-
1/2 cwater
-
1bay leaf
-
1 cangarbanzo beans, drained and rinsed 15oz
How To Make chicken chili

1In a large pot, cook onion, green/red pepper and garlic in oil over medium-high heat for 10 minutes or until onion is tender. Add chicken; cook and stir constantly for 4 minutes or until browned. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer, stirring occasionally, for 40 minutes.

2Add beans; cook, uncovered, for 20 minutes, stirring occasionally. Remove bay leaf.

3Serve and top, if you desire, with shredded cheese, sour cream, etc.
