chicken casserole

Got this recipe from a Penzey's spice catalog which is where I get all my spices. They have excellent spice blends, good prices and fabulous recipes on their site contributed by people like us! This casserole is very simple to make and the flavor will have you wanting more! I added the ritz topping myself but can be made without it to reduce the fat and calories but it tastes fabulous with it!

Ingredients For chicken casserole

1/2 cbutter, 1 stick

1/2 cdiced celery, 2-3 ribs

1/2 cdiced onion, 1 small

1/2 cdiced green bell pepper, 1 small

1 csliced fresh mushrooms
-
1 lbchopped fresh broccoli
-
1 1/2 lbcooked chicken or turkey, cubed
-
1 tsptuscan sunset seasoning from penzey's spice or use regular italian seasoning
-
1/2 tspkosher flake salt
-
1/2 tspfreshly ground pepper
-
1/2 tspgranulated garlic powder
-
1 -8oz pkgcream cheese, cut into cubes
-
1-sleeveritz crackers, crushed- this is optional
-
1/2 stickbutter, melted- this is optional
How To Make chicken casserole

1preheat oven to 350 degrees.

2In a large frying pan, melt the stick of butter over medium heat. Add the vegetables and cook, stirring occasionally, until tender, about 10 minutes.

3Add the chicken, tuscan sunset or italian seasoning, salt, pepper, and garlic. Stir and then add the cubed cream cheese. Reduce heat to low and cook until the cream cheese is melted, stirring frequently.

4Pour the mixture into a buttered 3 quart casserole dish.If you want the ritz topping- Mix together the crushed ritz and 1/2 stick melted butter. Spread the ritz mixture evenly over the casserole.

5Bake, uncovered, at 350 degrees until the top is golden and a little bubbly, approxiametly 25-30 minutes.

6*My son loves to add a little shredded cheddar to the top but what doesn't he add cheese to lol!!

7*I like to serve this with brown or wild rice
