Ingredients For chicken cacciatore/italian meatballs
- CACCIATORE

6chicken thighs, skinless
-
2 jarspaghetti sauce (your favorite kind is fine)

2 cantomatoes, canned italian style with juice
-
1 lgyellow onion,sliced
-
2 lggreen bell peppers, sliced
- MEATBALLS
-
1 1/2 lblean hamburger
-
1egg
-
1/4 cparsley, italian, chopped fine
-
1/4 cparmigiano-reggiano, grated
-
1/2 citalian bread crumbs
-
2 clovegarlic, minced
-
1/4 craisins, chopped
- ADDITIONAL INGREDIENTS TO SPLIT RECIPE

1 lbpasta
-
6submarine sandwich rolls
-
6 sliceprovolone cheese
How To Make chicken cacciatore/italian meatballs

1Mix the meatball ingredients and form into 4 TBLS balls (or the large Pampered Chef scoop heaping). Set aside.

2You will need a 6 quart crock pot for this recipe. Spray the bottom and sides with nonstick cooking spray. Put chicken in the bottom and top with onions and peppers. Then in a single layer put in meatballs.

3Pour spaghetti sauce and canned tomatoes over all. Cook on low for 8 to 10 hours.

4Now you have the great option of which one is for dinner tonight and which one to tuck away in the frig for a super quick dinner later in the week.

5Meatballs: I take out the meatballs and one cup of sauce put it in a microwave safe dish and let cool. After it is completely cooled cover and put in the frig. On meatball sub night, warm the meatballs in the microwave. Meanwhile, split sub rolls lengthwise and put in a slice of provolone cheese. Once meatballs are reheated, sit them on top of the cheese and eat!

6Cacciatore: Boil your favorite pasta. After draining completely top with a chicken tight and lots of yummie sauce.
