Ingredients For chicken burrito plate

  • 4
    boneless skinless chicken thighs
  • 1/2 c
    chopped red onion
  • 1 1/2 c
    frozen corn thawed
  • 1 tsp
    each mexican oregano, dried onions, cumin, garlic powder and salt
  • 2 tsp
    chili powder
  • juice of 1 lime
  • 1 Tbsp
    oil
  • 2 c
    cooked rice
  • cotija cheese
  • crema
  • 1 c
    shredded cheddar cheese
  • 1/2 c
    prepared salsa

How To Make chicken burrito plate

  • 1
    Cut the chicken into cubes. Mix the oil, cumin, oregano, dried onions, garlic powder and chili powder together. Add the chicken pieces and marinate at least 5 hours or overnight.

    Cook the chicken on a grill or in a frying pan until done. Mix the corn, red onion and lime juice together.

    Place the rice on a plate. Top with cheddar cheese then chicken pieces. Then corn mixture. Top with salsa, then Cotija cheese and a dollup of crema
