chicken and broccoli pasta (fast and simple)

This recipe is made simple using an already roasted chicken from the store deli (about $4.00). you could use frozen broccoli just be careful to drain it well. Its simple, fast, and feeds a lot and can be scaled up or down as needed. Hope you enjoy

Ingredients For chicken and broccoli pasta (fast and simple)

  • 1 box
    13.25 oz spaghetti, (not angel hair)
  • 4-5 c
    broccoli florets
  • 2 Tbsp
    butter, unsalted
  • 4-5 c
    roast chicken (store bought, already cooked)
  • 1/8 Tbsp
    season flour
  • 1/2 sm
    sweet onion
  • 6 clove
    fresh garlic, chopped fine
  • 2 1/2 c
    heavy cream
  • 2 c
    grated Parmesan cheese (try to use fresh)

How To Make chicken and broccoli pasta (fast and simple)

    Cook pasta according to package directions, a little on the al dente side. Drain and set aside, reserving the water and returning it to the pan.

    In returned pasta water add broccoli and cook till just tender (about 3min), Meanwhile remove store bought chicken from bone and chunk up into quarter size pieces, add to broccoli durning the last min, drain and set aside.

    In the same pan (this is a one pot recipe) add butter, melt and add onions, and garlic, cook over medium heat till onions as just tender but use caution not to brown garlic (it will cause bitterness). Add season flour making a light brown roué, add heavy cream and using a whisk, stir until smooth.

    Add cheese and stir until smooth (you may need to add a bit of regular milk if it gets too thick)

    Add chicken, broccoli combine and lastly add pasta. Serve with a good crusty bread and enjoy!!!!! ***you could add some sliced almonds at the very end for a little more crunch texture***
