Ingredients For chicken breast w tomatoes and capers

  • 2 1/4 lb
    breast boneless skinless ckicken
  • taste oz
    salt & pepper
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    butter
  • 6 Tbsp
    shallots chopped
  • 4 tsp
    garlic
  • 4 tsp
    tarragon
  • 28 oz
    plum tomatoes chopped
  • 1/4 c
    red wine vinegar
  • 1 c
    dry white wine
  • 1/4 c
    capers drained
  • 2 Tbsp
    tomato paste
  • 1/4 c
    fresh parsley

How To Make chicken breast w tomatoes and capers

  • 1
    sprinkle chicken with salt & pepper
  • 2
    heat oil & butter and brown breast
  • 3
    add shallots & garlic - saute then add tarragon, tomatoes, vinegar,capers wine and paste. dissolve bottom gradueaux
  • 4
    blend, bring to boil, cover and simmer for 9 minutes sprinkle with parsley serve
