Ingredients For chicken bolognese

  • 4
    servings boned chicken parts cut in 2 inch pieces
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    butter
  • 4 oz
    sliced mushrooms
  • 2 Tbsp
    minced shallots
  • 2 Tbsp
    sherry wine
  • 1/4 c
    brown gravy mix
  • 1/2 c
    chicken broth
  • 4
    slices provolone cheese
  • 1/4 c
    parmesan cheese
  • roux to thicken (equal parts flour & margarine)

How To Make chicken bolognese

    In a saute pan simmer shallots . Add the chicken parts & the stock, wine, butter, & brown gravy. Simmer at low heat until chicken is cooked. Add the mushrooms. Remove the chicken from pan & keep warm. Add roux to thicken the sauce. Place the chicken on a plate & top with provolone cheese. Add sauce & top with parmesan cheese
