I had 2 pieces of chicken and a bag of dried black beans to make dinner with. I made it spicy but you can omit the peppers if you would like. This a great dish for the Crockpot!

Ingredients For chicken & black beans

2chicken quarters

1 lbdry black beans

6 qtwater

1bay leaf

1/2 tspthyme, dried

1/4 tspsage, dried

1 Tbspchicken seasoning

2 Tbspcumin
-
2 clovegarlic, minced

1 mdonion, chopped
-
1 canstewed tomatoes
-
1 pkgfrozen corn
-
2jalapeno peppers
-
1/2 tsppepper
-
salt, to taste
How To Make chicken & black beans

1Place chicken in a Lg stock pot. Add water, bay leaf, Thyme, Sage, Chicken Seasoning, Cumin, and pepper. Cook for 1 hour on Medium heat.

2Remove chicken and set aside to cool. Reserving the liquid.

3Pour reserved liquid through a fine mesh wire strainer, to remove any bones pieces that may have become dislodged. Return liquid and the bay leaf to stock pot.

4Add rinsed beans, onion, and garlic to the stock pot. Cook covered on Medium for 2 hrs. Checking periodically to make sure there is enough water. Add 2 cups, if needed, at a time.

5At this point add the stewed tomatoes, corn, jalapeno peppers, and salt. Continue to cook until beans are soft.

6Serve with cornbread or tortillas.

7This a wonderful dish for the crockpot too. Just dump it all in, set on high, let cook at least 8 hrs, remove the chicken to shred when you get home. Walla you got dinner.
