Ingredients For chicken balti

3boneless chicken thighs cubed

3 Tbspbalti seasoning

2 tspgaram masala
-
3 Tbspwater
-
1/2 csliced mushrooms
-
1 ccauliflower florets thinly sliced

1 mdonion diced
-
2 Tbspveg. oil
-
32 ozcan peeled tomatoes crushed with your hands.

3 Tbspbrown sugar
-
2 Tbsplime juice
-
1/3 csliced almonds crushed in food processor
-
1 cgreek plain yogurt room temp
-
salt to taste

1/4 cfresh cilantro chopped

basmati rice and naan for serving
How To Make chicken balti
-
1Mix the Balti seasoning and Garam Masala together with the water and set aside. In a large pot add 1 tbsp of oil. Add the onion, mushrooms, and cauliflower. Stir fry for 5 minutes. Remove vegetable with a slotted spoon and set aside.

2Add the other 1 tbsp oil to the same pan and brown the chicken in batches if needed. Remove with slotted spoon and place with the vegetables.

3Add the tomatoes, brown sugar and Balti seasoning mixture and bring to a boil. Reduce heat to a simmer and add the almonds and the chicken and vegetable mixture. lower the heat to low. Slowly stir in the yogurt and spoonful at a time mixing until well incorporated with each spoonful. Stir in the lime juice and simmer on low for 15 minutes. Taste and adjust for salt.
