i came up with this recipe after workin with my churches summer camp... camp had turkey i use chicken..the key is cookin/parboilin stuff..this is one recipes i'm usin at my nephews for x-mas.

Ingredients For chicken baked casserole

2 1/2-3 lbchicken tenders,cubed cooked

3 lgpotates,parboiled[10 min]

2celery ribs,chopped small
-
1 mdyellow onion,chopped small
-
1 mdcarrot, shredded
-
1/2 mdgreen bell peppers,chopped small
-
1/2 mdred bell pepper,chopped small

1 jarchicken gravy
-
1 jarsour cream, lite[use chicken gravy jars to measure]
-
1/2 cdried cranberries
-
1 boxstuffing mix
-
2/3 lbmild pork sausage
-
1apple,grated
-
1 cchopped walnuts
-
1 cancream of chicken soup
-
1-2 csharp cheddar cheese
-
1 smcan french fried onions
-
1 Tbspdried chives
How To Make chicken baked casserole

1first step...take dried cranberries and put in med size bowl with 1 c hot[not boiling] waterlet sit while doin other stuff..at least 20 minutes...then drain well set aside[keep juice]

2now layering... first have tenders cooked[i like cooking them on the grill gives extra flavor]and evenly put chicken on bottom of 9x13 baking dish

3next layers...par boiled potatoes,celery,onion.bell peppers,carrots..put evenly over chicken,

4next mix equal amounts of chicken gravy and sour cream spread over veggies

5next take juice from dried cranberries and add water for amount of water on box... fry sausage once meat no longer pink add apple cranberries and walnut to stuffing that was made by box direction[using juice]

6next spread stuffing over gravy

7next mix chicken soup and cheese spread over stuffing

8next crush french fried onion some put on top soup/cheese mix

9bake at 350 for 1-1 1/2 hrs til hot and bubbly.. take out of oven and sprinkle chives on all wait bout 15 min before slicing... one dish meal... a fresh fruit salad goes well with this
