I threw this together one nite I hadnt been to the grocery store and had just a few items in the fridge that needed to be used so this is what my brain came up and it wasnt to shabby and Im asked to make it quite often now, dont know what to call it,chicken bacon and potato skillet casserole maybe??

Ingredients For chicken, bacon and potato casserole

boneless skinless chicken breast...cut into chunks

1 lb bacon...cut up into pieces

5-6 potatoes...sliced

2 cans cream of chicken soup

1 onion...diced
-
milk
-
shredded cheese...optional

butter
How To Make chicken, bacon and potato casserole

1season your chicken however you like (I use montreal chicken, kickin chicken or just any chicken seasoning) and cook in a skillet with a little butter on med low heat till throughly cooked. in a different skillet cook your bacon and drain add to cooked chicken. In another deep skillet add some butter and your potatoes cook potatoes until soft and just a little crisp add your onions when potatoes are slightly browned add your chicken mixture. in a med bowl put your cream of chicken soup and then fill one can with milk and add that to the soup and mix well pour over chicken and stir. continue cooking on med low heat until warm.

2you can also put this mixture in a casserole dish and top with shredded cheese and bake at 350* until cheese is melted
