My Greek co-worker has been making this soup and bringing it to share with the ladies at lunch. It is a rich and tasty chicken soup and I love the addition of the orzo. Excellent soup for someone who is not feeling well!

    whole chicken
  • 12 c
    water
  • 3 stalk
    celery, cut in half
  • 3 sm
    carrots
  • 1
    onion (cut in fourths)
  • salt and pepper to taste
  • 4
    eggs, separated
  • 4
    lemons, juice only
  • 1 lb
    orzo

How To Make chicken avgolemono soup (greek) - steph

    Cook chicken, onion, carrots, celery, salt and pepper in water for 1 1/2 hours. Remove chicken and vegetables from broth. Return stock to boiling and add the Orzo and broken up chicken.

    While Orzo is cooking, beat egg whites until stiff; add yolks and lemon juice. Beat for one minute. When Orzo is cooked, remove from heat. Slowly add one ladle of broth to egg and lemon mixture (so that mixture can temper and not curdle the eggs). Add egg/lemon to Orzo and heat on stove for a few minutes. ENJOY!!!
