chicken - any way you say it!
You can bake it,broil it, fricassee it, fry it, stew it,stuff it, there are so many good ways to prepare it. There's a'la king,potpie,parmesan...on and on I could go. I love it in so many ways! I could eat it cold in salads,hot in soups,creamy, mild or spicy in casseroles any day of the week. I'm searching for my favorite recipe, which I have not used for a while, and it is Chicken Fricassee. I will try to recall it from memory, as it was a recipe my mom got from a friend,who shared with me, and and I've made it many times in the last forty years. I am not able to find the written card it was on, so I will guess at the proportions in the ingredients. It can easily be adapted to your tastes, and the recipe can be doubled, or whatever you need for your family.
Ingredients For chicken - any way you say it!

1 lbchicken breasts, boneless and skinless

2 Tbspunsalted butter

2 Tbspoil,

1/2 ca/p flour

salt and pepper to taste, perhaps 1/4 tsp.each

1/4 tsppoultry seasoning

1 canchicken broth,or about 14-16 oz. if using homemade

1 Tbsp*optional, lemon juice

1/2 tsp*optional,paprika, sweet mild, for color mostly
How To Make chicken - any way you say it!

1Cut chicken into strips or chunks of equal size. Roll in flour which has been seasoned with salt,poultry seasoning, and paprika, and shake off the loose flour.

2Melt the butter in a deep frying pan, add oil, and when bubbly, add chicken and brown on all sides. When it is golden brown remove chicken from pan and keep warm, while you make a gravy of the bits and butter/oil.

3Add enough flour and chicken broth to pan and stir to make a gravy. I make a paste first of flour and water/or milk, and stir it in, then add the broth.

4Season with a little lemon juice,if you wish.This is wonderful served with rice or mashed potatoes, a real comfort food in the Winter, along with your favorite vegetable,biscuits and a dessert.
