chicken and slaw in egg rolls

This is just another one of those...hmmmm recipes.....you have some of this and some of that...and what can you make with it....???? This is what I came up with! I sent two of these with some sauce to our next door neighbor and she loved them!

Ingredients For chicken and slaw in egg rolls

12 large wonton wrappers
-
cole slaw mix 16 oz – 1 bag
-
apple juice “about 1 tablespoon” i use frozen “unsweetened”

green onions “sliced using white and green” about 4
-
asparagus “ fresh” i used 8 stalks cut into 1/4inch pieces
-
6 -8 chicken tenders “ cut into small pieces”
-
sesame oil “ smidge” about 1/8 scant teaspoon
-
unsalted butter “ a tablespoon or so “
-
salt to taste
-
pepper to taste
-
sryacha hot chili sauce 4 tablespoons or so “ to taste”

water to seal the wontons
-
dipping sauce:
-
sryacha hot chili sauce - ¼ to ½ cup
-
soy sauce – about 2 tablespoons
-
honey about 3 tablespoons
-
water maybe 1 tablespoon
-
light brown sugar …depends on how sweet you like it, i used only 2teaspoons

tomato paste – 1 tablespoon
How To Make chicken and slaw in egg rolls
-
1Put ½ the slaw and sliced green onions in the apple juice and marinade in a zip lock bag and refrigerate for several hours.

2Toss about every ½ hour. Once the slaw mixture has marinated sauté gently with a smidgen of sesame oil, butter, salt and pepper and juice from the bag.

3Then cool again in the refrigerator. When mixture has cooled toss in remaining slaw and mix. Set aside

4Fry chicken pieces and asparagus in hot sauce and butter, for a few minutes. You’ll want to make sure the chicken is cooked. Do not drain…..Cool ….

5Add chicken mixture to slaw mixture and toss, set aside for about 15 minutes tossing or mixing every 5 minutes or so.

6Put some chicken on the bottom of won ton wrapper then Wet the rim of the wrappers and seal. Fold corners to each other.

7Dipping sauce:

8Mix all ingredients and cook over very low flame…this should be really thick, you can either serve the sauce warm or cool.
