Ingredients For chicken and sausage jambalaya

1 smchicken, broiler-fryer

1celery bunch, sliced

2 clong grain rice, uncooked

1 lbham, cubed

1 cchopped onion

3/4 cchopped parsley

1 lgbay leaf
-
2 tspsalt

1/4 tsphot sauce

3garlic cloves
-
1 lbsmoked sausage

4 Tbspbutter

1 cchopped green bell pepper

6 oztomato paste
-
1/4 tspthyme
-
1/2 tsppepper
-
1/4 cchopped green onion
-
2 lgonions
-
5 cchicken broth
-
1 lblarge shrimp,peeled and de-veined
How To Make chicken and sausage jambalaya

1Put chicken, 1 onion (cut in half), celery and 1 garlic clove in pot.

2Cover with water.

3Cook for approximately 1 hour or until chicken is tender.

4Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed).

5Debone chicken and cut sausage into 1/2 inch cubes.

6Fry sausage and ham in dutch oven until lightly browned.

7Remove meat from pot and add butter.

8Saute 1 chopped onion, pepper and 1/2 cup chopped parsley until tender.

9Add chicken, sausage and ham to vegetables.

10Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and hot sauce.

11Add cooked rice and mix thoroughly.

12Simmer over low heat for 10 minutes.

13Stir frequently and remove bay leaf and toss in 1/4 cup chopped parsley and 1/4 cup chopped green onion tops. add shrimp and simmer until pink about 5-7 minutes.
