Ingredients For chicken and sausage gumbo (crockpot)

1/3 cflour

1/4 tspred pepper

1/2 tsppepper

1 tspsalt

4minced garlic cloves
-
1/2 cchopped celery
-
1/2 cchopped green bell pepper

1 cchopped onion
-
2 cokra, sliced, fresh, frozen

2 ccooked chicken, diced
-
12 ozsmoked sausage, in 1/2" slices

3 cwater
-
1/3 ccooking oil
-
hot cooked rice
How To Make chicken and sausage gumbo (crockpot)

1For roux, in a heavy 2 quart saucepan stir together flour and oil until smooth.

2Cook over medium-high heat 5 minutes, stirring constantly.

3Reduce heat to medium.

4Cook and stir constantly about 15 minutes more or until a dark, reddish brown roux forms. Cool.

5In a 3 1/2, 4, 5, or 6 quart slow cooker place water.

6Stir in roux.

7Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper and red pepper.

8Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours.

9Skim off fat.

10Serve over rice.
