Spicy food for two! I enjoy spicy foods and want to serve them even when there are just two for dinner. I had two chicken breasts and looked through my cabinet for something to pair the chicken with. The Mexican hot style tomato sauce just seemed to fit what my taste buds where wanting. Adding orzo and green chiles seemed the natural thing to pair the flavors with. It was delicious!

Ingredients For chicken and orzo casserole for two

2 lgchicken breasts, boneless and skinless

1 tspmrs. dash, fiesta lime, seasoning blend

1 (4 oz) canel pato brand salsa de chile fresco (mexican hot style tomato sauce)

1 (4 oz) candiced green chilies

1/2 corzo
-
1/2 cmexican blend shredded cheese
How To Make chicken and orzo casserole for two

1Sprinkle seasoning on chicken breasts. Pour tomato sauce into small baking dish. Place chicken in sauce and turn to coat.

2Add green chilies and orzo; stir.

3Cover and bake in a 350 oven for 30 minutes. Remove cover and sprinkle cheese on top. Return to oven for 5 minutes or until cheese is melted.

4NOTE: This is not a soupy dish as orzo will soak up the sauce. You may want to adjust baking time if it seems too dry for your preference or add tiny amount of water or tomato sauce during baking. Rice can be used in place of orzo if desired.
