This was just a little something I created when I was looking for a use for my fresh herbs. I like to serve it with long grain and wild rice and broccoli.

Ingredients For chicken and mushroom saute

2boneless, skinless chicken breasts

2 Tbspolive oil

6 cloveminced garlic

1/4 cminced onion

1 tspcurry powder
-
2 tspchopped fresh dill weed

2 tspchopped fresh rosemary

1 1/8 tspcoarse ground black pepper

1 cfresh sliced mushrooms
-
2 Tbspbutter
-
1/2 cchicken stock
How To Make chicken and mushroom saute

1Heat oil in skillet. Add chicken breasts, garlic, onion, curry, dill, rosemary and 1/8 tsp of coarse ground pepper. Cook until chicken is done through.

2Remove chicken and keep warm.

3Add mushrooms, butter and 1 tsp coarse ground pepper to skillet. Saute until mushrooms are tender.

4Add chicken stock and chicken breasts to skillet. Simmer 10 minutes.
