i have not made dumplings in yrs....wanted something different and something like chicken noddle soup[cuz both hubby and i have colds today]...i was hopin to jus look up here on JAP for a dumpling recipe but all i found was more like noddles to me than dumpling or were like cut out biscuts... so i took several recipes and came up with this....hubby jus loved it as did i... pic was takin after dinner[i forgot to take it before]

Ingredients For chicken and dumplings diane's way

1left over chicken carcus with bout 1/2 the meat on it

water to cover
-
1 mdonion
-
2ribs celery with leaves on

1 mdred pepper

severalbabby carrots
-
severalgrinds black pepper

1 pinchseasoned salt

2 mdbay leaves

1/4 cflour
-
milk
-
dumpling recipe
-
1 2/3 cflour

1 pinchsalt

1 1/2 tspbaking powder

2 lgeggs

2 Tbspmargine
-

How To Make chicken and dumplings diane's way

1take carcus and break into pieces put in lg stock pot add water to cover

2add all the veggies[rough cut cuz veggies are jus to flavor broth]add pepper,seasoned salt and bay leaves....bring to boil over high heat reduce to low or til it jus bubbles cook til if falls apart...take lg bowl and put colinder in it drain chicken into it.. debone ... put chicken meat back into pan add all the broth discard bones and skin and bay leaves

3cook over med heat til reduced by bout 1/2 bout 45 min

4mix 1/4 c flour with the milk[amount of milk depends on how thick u want chicken... i used bout 1 c] add to pan slowly stirrin/whiskin cook over med high heat til it comes back to a boil... check add more salt and pepper if needed boil a couple min on med heat than turn to low while ya make dumplings[this is important step cuz it can burn/scortch[sp] easy

5make dumblings... first nuke margarine[jus enough so u can mix it with other stuff... u do not want it hot or it will cook the eggs] set aside while you break both eggs into a measurin cup...add margarine to eggs than add milk to make 1 c

6in med bowl mix flour salt and bakin powder stir well... now add milk/egg/margarine all at once stir quickly and to get all dry ingredients wet[do not over mix]

7now turn chicken in pan to med heat but make sure it is boilin add dumplings a teaspoon at a time to pan cook dumplings 10 min uncovered than cover well and cook 10 min more than remove cover and very gently push dumplings down into gravy to cover wait til they all resurface than serve and enjoy
