Blue Ribbon Recipe
A wonderful twist on chicken and dumplings. The base is creamy and full of chicken. Fresh cooked onions and celery add the flavor you expect. The touch of basil is a different, and delicious, twist. Peas give the easy casserole a pop of sweetness. The "dumpling" is like a drop biscuit that is infused with hints of basil. Once baked, the biscuit is firm but underneath is a little gooey like a traditional dumpling.

1/4 cchopped onion

1/2 cchopped celery

2garlic cloves, minced

1/4 cbutter or margarine

1/2 call-purpose flour

2 tspsugar

1 tspsalt

1 tspdried basil

1/2 tspground black pepper

4 cchicken broth

10 ozpackage frozen peas

4 ccubed, cooked chicken

2 cBisquick
-
2 tspdried basil

2/3 cmilk

We boiled 3 chicken breasts and used the broth from boiling them later in the recipe.

1In a large saucepan, saute onion, celery, and garlic in butter until tender.

2Add flour, sugar, salt, basil, pepper, and broth; bring to a boil.

3Cook and stir for 1 minute; reduce heat.

4Add peas and cook for 5 minutes; stirring constantly.

5Stir in chicken.

6Pour into a greased 9 x 13 baking dish.

7For the dumplings, combine Bisquick and basil in a bowl.

8Stir in milk with a fork until moistened.

9Drop by tablespoonfuls onto casserole (12 dumplings).

10Bake, uncovered, at 350 degrees for 30 minutes.

11Cover and bake 10 minutes more or until dumplings are done.
