With Thanksgiving around the corner, you will probably have some left over turkey, this recipe is GREAT for that left over turkey that you just cant think what to do with. As a farmers daughter, I grew up on hearty meals,and in the winter time( Good old Nebraska)we ate filling meals. We raised chickens (among many things),and there are endless things to make with chicken,but my dad was a gravy man,so he loved eating moms Chicken Ala King. It's the perfect balance of sauce and potatoes and meat all in one meal,never hurts the throw in some cornbread as well :) Enjoy!

Ingredients For chicken ala king
- GRAVY SAUCE

1/2 cbutter or margarine
-
1 1/2 cmilk
-
1/2 tspsalt
-
1/4 tspblack pepper
-
1 mdgreen bell pepper (chopped)

1/2 lgonion *diced
-
1/2 call purpose flour
-
1 smcan of mushrooms (optional)
-
1 jar(diced) pimientos 2 o.z.

1 1/4 cchicken broth
-
1 1/2 cvelveeta cheese (cubed)
-
6chicken bouillon cubes
-
1 lgwhole chicken or ( cups of turkey) boiled and deboned
- BASE ( CAN USE ONE OF THE FOLLOWING ITEMS)

mashed pototoes
-
rice
-
biscuits
-
toast or bread
How To Make chicken ala king

1Boil 1 large whole chicken, add 3 chicken bouillon cubes to the water. Once chicken is falling off the bones, remove from stove top and de-bone, set chicken aside.

2In a large soup pot ( I use the same pot I boiled my chicken in) Melt butter on medium-high heat. Cook bell peppers and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.

3Add flour, salt and pepper. 3 remaining bouillon cubes. Cook over medium heat, stirring constantly,Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Turn down to a low-medium heat and stir in chicken (or turkey) and pimientos.cut up Velveeta cheese into cubes to melt faster, I let my sauce simmer for about 30-40 mins to thicken up.

4Once thickened, pour over rice,potatoes, biscuits,bread or even toast!! It's fabulous over all these different items. That way you never get board with it. I usually cook up some cornbread to go with it. Hope you love it as much as my friends and family do.
