Ingredients For chicken ala cacciatori

  • 4
    chicken breast, bone in (or chicken thighs-6)
  • 2 lg
    green bell peppers-or 1 red, 1 green, sliced
  • 2 lg
    onions, vidalia, peeled, and sliced
  • 1 c
    sliced mushrooms-i like crimini
  • 2 jar
    spagetti sauce-or your own pasta sauce
  • 2 tsp
    oregano, dried
  • 2 tsp
    basil, dried
  • 1 tsp
    fresh chopped parsley-to top when done
  • 1/2 c
    olive oil
  • 3 clove
    garlic-peeled and sliced

How To Make chicken ala cacciatori

  • 1
    Fry chicken in a large, deep, fry pan with a little olive oil (1/2 cup), over medium heat until browned on both sides. Add the remaining ingredients, except the sauce and fresh parsley. Allow the chicken to cook in the peppers, onions, garlic, and mushrooms until softened.

    Add the sauce and cook, covered, at low heat until the chicken falls off the bone.
  • Fall off the bone chicken, in a delicious rich sauce with peppers, onions, and mushrooms that will please the palette of any guest or family member.

    I serve this with creamy polenta or gemeli pasta. Sprinkle with chopped parsley.
