Ingredients For chicken adobo

  • 4
    bone in chicken thighs
  • 1 Tbsp
    oil
  • 1 c
    coconut milk
  • 1/2 c
    soy sauce
  • 1/3 c
    white vinegar
  • 1 Tbsp
    sugar
  • 2
    bay leaves
  • 6 clove
    garlic minced
  • 1
    red chili chopped
  • 3 Tbsp
    cilantro chopped

How To Make chicken adobo

    Add oil to large dutch oven. Brown the chicken on both sides. Add in the coconut milk, soy sauce, vinegar, sugar, bay leaves, garlic and chili. Bring to boil. Reduce heat to a low simmer. Cover the pan and allow to simmer 1 hour.

    In the last 10 minutes uncover and crank up the heat to thicken and reduce the sauce. Serve over rice or noodles if desired and garnish with cilantro
