I used to make this at least once a month when my kids were younger, it seemed they could never get enough. I was pondering on what to make tonight and my daughter reminded me of how long its been since I made it. Lucky for her I had a block of mozzarella in the fridge. In this recipe the chicken is un breaded, which we like better. Also saves calories, but who's counting with all that cheese? LOL The sauce is so much better than the jarred sauce from the store and so easy. It's worth the 20 minutes it takes to make. I hope you try this recipe sometime...I think you will be pleased. Enjoy!

Ingredients For ~ cheesy stove top chicken parmesan ~ cassies

1 1/2 lbboneless, skinless chicken breast, cut into thin slices - about 1/4 - 1/2 inch

salt& pepper

1 - 2 Tbspolive oil
-
8 ozshredded mozzarella cheese - fresh shredded is best
-
1/4 cfresh shredded parmesan
-
1/2 tspdried basil
-
8 ozprepared pasta
- SAUCE
-
2 Tbspolive oil
-
1 smonion, chopped
-
2 clovegarlic, minced
-
1 - 32 ozcan, plum tomatoes & juice - break apart into pan, by squeezing

2 - 3 Tbsptomato paste
-
2 Tbspbasil paste
-
1/2 tspsalt - or to taste
-
1/2 tspgarlic powder
-
1 - 1 1/2 tspsugar - or to taste - optional - we like ours a little sweet
How To Make ~ cheesy stove top chicken parmesan ~ cassies

1For sauce: In a medium saucepan over medium heat, saute garlic and onions in the olive oil until tender - about 5 minutes. To this add the tomatoes, breaking apart with your hands as you add them. Stir in paste, garlic powder, salt and basil. Bring to a boil, then reduce heat and simmer for 20 minutes. Stirring occasionally.Taste and adjust seasonings. This is when I add the sugar. Set aside.

2While sauce is simmering, prepare the chicken. In a large skillet over medium high heat, add oil and when hot - arrange chicken slices evenly in pan, salt and pepper and cook until browning on both sides, about 6 minutes.

3Spread marinara over the chicken and then sprinkle evenly with cheese, dried basil and Parmesan cheese.

4Cover and cook until cheese is melted and everything is good and heated through.

5Serve over prepared pasta and sprinkle with more Parmesan cheese if desired. The chicken is also great in a hoagie roll and broiled to brown the cheese...yummo! Delicious!
