I needed something fast and easy for the crockpot and this is what I came up with. You can't much easier then just three ingredients.

Ingredients For cheesy mexican chicken

1 cchunky salsa

1 lbchicken breasts (cut in large slices while partially frozen)

4 slicemonteray jack cheese with jalapeno peppers
How To Make cheesy mexican chicken

1Spread a small amount of salsa in pan and put chicken breasts over the top. Spread with additional salsa. Put the 4 slices of cheese over the breasts

2Serve with rice and tortilla.

3This can also be made in the oven: Put the 4 slices of cheese over the breasts and cover with aluminum foil. Bake at 350 for 50 mins.
