cheesy chicken and rice

Easy recipe, and my family loves it! It is also great for large gatherings, as recipe can be doubled. The chicken tenderloins cook more quickly than chicken breasts, so they bake very tender in this dish. Sometimes, I add a little more cheese toward the end of baking, and carefully broil it to brown it nicely.

Ingredients For cheesy chicken and rice

  • 2 pkg
    knorr's chicken rice mix
  • 2 can
    cream of chicken soup
  • 1 can
    low sodium chicken broth
  • 4 oz
    sour cream, lite
  • 10
    fresh chicken tenderloins
  • 1 c
    mozzarella cheese, low-fat, grated
  • 1/2 c
    cheddar cheese, grated

How To Make cheesy chicken and rice

    Put dry rice in bottom of 9x13 baking dish.

    Add soups and chicken broth to rice, and stir until all rice is "wet."

    Stir in sour cream.
  • 4
    Lay chicken tenderloins atop rice mixture.
  • 5
    Sprinkle on mozzarella cheese, and then sprinkle on cheddar cheese.

    Bake at 350 degrees for one hour.
