This quick dish is always a hit when I have a luncheon at work or church. It's so easy to customize: add veggies, spicy it up with some jalapeno, or cool it down with a dab of sour cream or ranch dressing.

Turn Buffalo wings into a cheesy chicken casserole. This dish is cheesy and has the perfect amount of Buffalo flavor. Purchasing store-bought grilled chicken makes prep a breeze. Filled with cubed chicken, brown rice, onion, and cheese, this is a quick, easy, and hearty meal for game day.

    grilled chicken cubed, cooked
  • 2 c
    shredded Colby Jack cheese
  • 1 lg
    onion
  • 1 c
    Frank's Red Hot Wings Buffalo Sauce
  • 2 c
    cooked brown rice
  • dash
    garlic pepper

How To Make cheesy buffalo chicken casserole

  • Cooked brown rice in a bowl.

    Preheat oven to 300. Cook 2 cups of brown rice and place in a bowl.

    For the grilled chicken, I like to use John Soules Foods Rotisserie Seasoned Chicken Breast Strips because they are gluten-free and fully cooked. I chop them into 1/2-inch cubes, add a few dashes of garlic pepper (season to your taste), and warm in a skillet over medium heat for about 5 minutes. Place chicken in the bowl with cooked rice.
  • Onion and grilled chicken added to the rice.

    Chop onion and saute in a 1/2 tsp of olive oil add a few dashes of garlic pepper (season to your taste). When done, add to bowl with the grilled chicken and rice.
  • Cheese and wing sauce mixed in.

    Add 1 cup of cheese and 1 cup of wing sauce. Mix well.
  • Chicken poured into a casserole dish and baking.

    Lightly spray a casserole dish with Pam. Add chicken and rice mixture. Sprinkle the remaining cup of cheese on top. Bake in the oven until cheese is golden or 30 minutes.

    You can use white rice. Sometimes I break up corn tortillas and place them at the bottom of the dish and layer the chicken mixture. Sometimes I add sliced mushrooms. You can add whatever you like and make it as mild or hot as you want.
