I make these when I want some yummy chicken, but am short on time. They're easy to make and delicious.

Ingredients For cheesy, apple-stuffed chicken

  • 2
    boneless, skinless chicken breasts
  • 1/2 c
    chopped apple, i used granny smith
  • 2 Tbsp
    reduced-fat, shredded cheddar cheese
  • 1 Tbsp
    italian-style bread crumbs
  • 1 Tbsp
    butter
  • 1 Tbsp
    water
  • 1-1/2 tsp
    cornstarch
  • 1 Tbsp
    fresh parsley, chopped, for garnish
  • 1/4 c
    chicken broth
  • 1/4 c
    water

How To Make cheesy, apple-stuffed chicken

    In bowl, combine apple, cheese and bread crumbs. Between sheets of waxed paper, pound chicken to 1/4'-thickness.

    Divide apple mix evenly between chicken breasts, placing apple mix down center of each chicken breast. Roll up each chicken and secure w/ toothpicks.

    Melt butter in skillet over medium heat. Brown chicken on all sides.Add broth & 1/4 cup water to skillet. Cover and simmer for about 15 mins, or until the chicken is no longer pink inside. Transfer chicken to a platter. In a measuring cup, combine remaining water and cornstarch. Stir into pan.Cook, stirring until thickened. Pour gravy over chicken. Garnish w/ parsley.
