cheese pasta w/ grilled chicken

This was dinner last night. My family loves cheese, and this is one cheesy dish. I added some veggies I had on hand, and grilled some small chicken breasts seasoned well. I lay the sliced breasts right on top of the pasta, and baked for 30 minuted until bubbly. Enjoy! My photos

Ingredients For cheese pasta w/ grilled chicken

  • 6 oz
    pasta of choice, ( i cook just till al dente )
  • 4
    small chicken breasts, seasoned and grilled or fried ( optional )
  • 1/2 c
    sliced portabella mushrooms
  • 1/2 c
    red bell pepper, diced
  • 1 sm
    onion , rough chopped
  • 3 Tbsp
    minced, garlic
  • SAUCE
  • 1/4 c
    unsalted butter
  • 1/3 c
    flour
  • 3 c
    milk
  • 3 - 1/2 c
    shredded, semi hard cheese ( such as sharp, aged cheddar )
  • 3 oz
    shredded, jack cheese
  • pinch
    nutmeg
  • 1 tsp
    kosher salt
  • 1/2 tsp
    chipolte powder
  • 1/4 tsp
    garlic powder
  • salt and pepper to taste

How To Make cheese pasta w/ grilled chicken

    First thing I do is grill the chicken. ( if using ) Preheat oven to 325 degree F. Spray 8 inch casserole with nonstick cooking spray. Set aside. ( I double the batch and use a 9 x 13 dish ). Cook pasta according to box directions ( I do cook mine to just al dente, as it will finish cooking during baking ).

    In olive oil ( about 2 tbsp ) saute the veggies, set aside.

    Make sauce: Melt the butter in a heavy-bottom saucepan over medium heat and whisk in the flour. Continue whisking and cooking for 2 minutes. Slowly add the milk, whisking constantly. Cook until the sauce thickens, about 10 minutes, stirring frequently. Remove from the heat. Add the cheese, salt, chile powder,nutmeg and garlic powder. Stir until the cheese is melted and all ingredients are incorporated, about 3 minutes.

    In a large bowl, mix the sauteed veggies with the drained pasta.

    Now, add the sauce to the veggies and pasta; mix well.

    Scrape into your prepared pan. I topped mine with seasoned bread crumbs, parm cheese, garlic salt and paprika.

    I then top with the grilled chicken, and bake for 30 - 35 minutes or until bubbly and golden.

    Salt and pepper to taste. Enjoy!
