I made this up one day, after having another real, simple pasta dish served to me. Just started with roma tomatoes, chicken, onion's, olive oil, angel hair pasta. I caught my husband( as I often teased him:)), with this dish and my chocolate cake, banana bread, and my cake mix cookies. He'd just laugh and say it helped but what did it was my smile. He died in 2009, miss him terribly.This is dedicated to him. Hope you love it as much as he did and the rest of my family do. They alway's want me to cook it when they visit.

Ingredients For catch a man chicken-tomato angel hair pasta

  • 4 md
    chicken breast halves, skinless and boneless
  • 2 md
    yellow onions or videlia, red, whatever is your favorite
  • 8- 12 md
    roma tomatoes
  • 1 bottle
    olive oil
  • 1/2 c
    old bay seasoning
  • 3/4 Tbsp
    garlic powder
  • 1/2 tsp
    garlic salt
  • 1-2 Tbsp
    jerk seasoning
  • 1 jar
    parmesan cheese grated
  • 1 box
    angel hair pasta

How To Make catch a man chicken-tomato angel hair pasta

    Take the onion's, Roma tomatoes, dice into small size chunk's'. Fry them,on med heat, in a big, high sided pan, adding 1/2 cup of olive oil. Fry until onion's are tender. Lay the 4 chicken breast's on top of mixture, put lid on and simmer until chicken is half way done. Start chopping chicken with spatula, until you break up into small hunk's, adding another 1/2 cup of olive oil as needed. Cook until juice from tomatoes and chicken is almost cooked away. Add seasoning's. In the meantime, Put a big pot of water on to boil. This is for the Angel Hair pasta, when it's boiling, add pasta (with Angel Hair doesn't take very long to cook, just a few minute's)If pasta get's done before main ingredient's, drain water off. To drained pasta stir in 1/2 to 1 cup of olive oil and add in 1/2 of Old Bay and 1/2 of Jerk seasoning, add about 1 cup of grated parmesean cheese,and 1 teas. or so of garlic salt. Keep tasting as you add these ingredient's small amount's at a time. Put lid back on and keep warm, waiting for chicken mixture.Chicken mixture will be ready when it no longer is wet looking, you dont want it like tomato sauce, but drier. When done, stir into pasta, adding olive oil, and seasoning's, to taste, stir thoroughly to cover all the pasta with seasoning's and oil.Sprinkingly it with parmesean while stirring and taste to find what's right for you.Enjoy!! Serve with more grated Parmesean, if wanted.
