Ingredients For cashew chicken

  • 1 Tbsp
    cornstarch
  • 1 Tbsp
    brown sugar
  • 1 c
    chicken broth, i used 1 t. better than bouillon
  • 1 Tbsp
    soy sauce, light
  • 3 Tbsp
    olive oil, extra virgin
  • 1 sm
    chicken breast boneless and skinless
  • 1/2 sm
    green bell pepper, cut in small strips
  • 1 can
    water chestnuts,(8 ounce) drained
  • 1 tsp
    grated gingerroot
  • 2
    green onions, sliced
  • 1/2 c
    cashews, salted

How To Make cashew chicken

    Fix jasmine rice in rice cooker or on the stove.

    Use a medium or large skillet. Cut up chicken breast in small pieces. Add 2 Tablespoons olive oil to skillet. Cook chicken on low until no longer pink.

    Put paper towel on plate. Remove chicken from pan and let rest on plate.

    Mix first 4 ingredients until smooth.

    In same pan, heat remaining oil and stir fry green pepper, water chestnuts and ginger until pepper is crisp tender. About 3 - 5 minutes.

    Stir broth mixture and add to pan with green onions. bring to boil. Cook and stir until sauce is thickened.

    Stir in chicken and cashews. Heat through. Serve over rice.
