Ingredients For cashew chicken

1 Tbspcornstarch

1 Tbspbrown sugar

1 cchicken broth, i used 1 t. better than bouillon

1 Tbspsoy sauce, light

3 Tbspolive oil, extra virgin

1 smchicken breast boneless and skinless
-
1/2 smgreen bell pepper, cut in small strips
-
1 canwater chestnuts,(8 ounce) drained

1 tspgrated gingerroot
-
2green onions, sliced
-
1/2 ccashews, salted
How To Make cashew chicken

1Fix jasmine rice in rice cooker or on the stove.

2Use a medium or large skillet. Cut up chicken breast in small pieces. Add 2 Tablespoons olive oil to skillet. Cook chicken on low until no longer pink.

3Put paper towel on plate. Remove chicken from pan and let rest on plate.

4Mix first 4 ingredients until smooth.

5In same pan, heat remaining oil and stir fry green pepper, water chestnuts and ginger until pepper is crisp tender. About 3 - 5 minutes.

6Stir broth mixture and add to pan with green onions. bring to boil. Cook and stir until sauce is thickened.

7Stir in chicken and cashews. Heat through. Serve over rice.
