Ingredients For caribbean mango chicken

1 lbchicken breast, cut into strips

2 tspcurry powder

1/2 tspsalt

1/4 tsppepper

3 Tbspoil, divided

2 Tbspgarlic, minced

1 Tbspgrated fresh ginger
-
1 mdred bell pepper, cut into strips

1 mdyellow bell pepper or orange, cut into strips

2stalks celery, cut diagonal

1 can(14 oz) light coconut milk
-
2 tsplemon zest, grated
-
1 lgmango, cut into bite size pieces

3 Tbspfresh chopped basil
How To Make caribbean mango chicken

1season chicken with curry powder, salt and pepper.

2in a large nonstick skillet, heat 2 tablespoons oil over medium heat. saute chicken until just cooked, about 7-8 minutes. remove to plate and set aside.

3add 1 tablespoon oil to pan. saute garlic and ginger along with peppers and celery. saute 5-6 minutes. stir occasionally.

4add coconut milk, lemon zest and mango, along with chicken. heat through. stir in basil.

5serve with short grain rice.
