My "cackling" good chicken chili, with pinto beans and barley. a revised 1949 recipe from mom's ole recipe box. I revised it for today's tastes. With no beef and added a few new ingredients for a wonderful new South West Flavor, with chicken legs, and barley. A healthy alternative. And finger licking good!

Ingredients For cackling chicken leg kicking chili !

1-1/2 cchopped onion

2clove garlic, minced

1 Tbspcooking oil
-
2 cwater
-
1/2 cbarley, uncooked (not instant)

1 can16oz can chopped tomatoes

1 can16oz tomato sauce
-
3 cchicken broth, low salt
-
2 canwhole corn, drained
-
2 can4oz each. chopped green chilies, drained
-
1to2 Tbspchili powder
-
1/2 tspground cumin
-
1 pkgchicken legs, sauted
How To Make cackling chicken leg kicking chili !

1Saute onion and garlic in oil, until onion is tender. Put into a 4-quart saucepan or a dutch oven.

2Add remaining ingredients, but not the chicken, or canned beans. Bring to a boil.Reduce heat to low. Cover and simmer 40 minutes. Until the barley is tender.

3Saute the chicken legs, drain and set aside. Add canned pinto beans, and additional water or broth if chili becomes to thick upon standing. Taste and add more spice to your liking .

4Ladle chili into a bowl, and serve with one cooked , lip smacking, chicken leg for dipping into the chili!

5Served with shredded cheese, chopped green onions, sour cream and taco chips on the side. Be sure to provide plenty napkins.
