I like to do this one up then when the meat and rice has cooked, I'll throw a bag of frozen stir fry veggies in the pan with the meat stir thoroughly, heat just long enough for the veggies to heat through and voila!

Ingredients For bunyan's diabetic adobo with garlic fried rice

  • ADOBO
  • 2 1/4 # of meat, cut into chunks (your choice of pork or chicken)
  • 1 cup vinegar
  • 1 clove garlic, crushed
  • 1 head garlic, crushed
  • 1/2 cup water
  • 1 tsp. peppercorns
  • 1 tbsp. extra virgin olive oil
  • GARLIC FRIED RICE
  • 4 tbsp. extra virgin olive oil
  • 1 clove garlic, crushed finely
  • 4 cups cooked brown rice, refrigerated overnight
  • sea salt to taste

How To Make bunyan's diabetic adobo with garlic fried rice

    For the Adobo:

    Wash pork, chicken or beef
  • 3
    Place in a cooking pan (I use a wok)

    Mix in other ingredients
  • 5
    Cover the pan and bring mixture to the boil, using medium heat
  • 6
    Once boiling, stir mixture to separate meat pieces.
  • 7
    Lower heat, cook until meat is tender, stirring mixture once or twice
  • 8
    When meat is tender, transfer meat to a container and allow liquid in the pan to reduce almost completely

    Once liquid has reduced almost completely, put the meat back in the pan and allow to saute, stirring lightly.

    For the Garlic Fried Rice:

    Stir the chilled rice to separate the grains

    In a non-stick skillet, heat oil over medium-high heat

    Saute garlic until brown. Don't burn it or it will be bitter!

    Add rice and saute until rice is evenly cooked
