I like to do this one up then when the meat and rice has cooked, I'll throw a bag of frozen stir fry veggies in the pan with the meat stir thoroughly, heat just long enough for the veggies to heat through and voila!

Ingredients For bunyan's diabetic adobo with garlic fried rice
- ADOBO

2 1/4 # of meat, cut into chunks (your choice of pork or chicken)

1 cup vinegar

1 clove garlic, crushed

1 head garlic, crushed
-
1/2 cup water
-
1 tsp. peppercorns
-
1 tbsp. extra virgin olive oil
- GARLIC FRIED RICE
-
4 tbsp. extra virgin olive oil
-
1 clove garlic, crushed finely
-
4 cups cooked brown rice, refrigerated overnight
-
sea salt to taste
How To Make bunyan's diabetic adobo with garlic fried rice

1For the Adobo:

2Wash pork, chicken or beef

3Place in a cooking pan (I use a wok)

4Mix in other ingredients

5Cover the pan and bring mixture to the boil, using medium heat
-
6Once boiling, stir mixture to separate meat pieces.

7Lower heat, cook until meat is tender, stirring mixture once or twice
-
8When meat is tender, transfer meat to a container and allow liquid in the pan to reduce almost completely
-
9Once liquid has reduced almost completely, put the meat back in the pan and allow to saute, stirring lightly.

10For the Garlic Fried Rice:

11Stir the chilled rice to separate the grains

12In a non-stick skillet, heat oil over medium-high heat
-
13Saute garlic until brown. Don't burn it or it will be bitter!

14Add rice and saute until rice is evenly cooked
