- MARINADE

2 Tbspsoy sauce

2 Tbsprice wine or saki

1 tsptoasted sesame oil

4whole scallions chopped

4 clovegarlic

2inch piece of ginger cut into slices
- CHICKEN

6bone in chicken thighs

10dried black mushrooms steeped in hot water for at least 20 minutes. drain
- BRAISING SAUCE

1 1/2 cchicken stock
-
3 Tbspoyster sauce
-
3 Tbsprice wine or saki

1 Tbsprock sugar
-
1 tspcornstarch mixed with 1 tbsp water
How To Make braised chicken thighs in oyster sauce

1Mix the marinade ingredients together and add the chicken. Rub the marinade over the chicken and let marinate for at least 60 minutes.

2Transfer the chicken to a Dutch oven or clay pot. Arrange the mushrooms around the chicken.

3Mix the ingredients together for the braising liquid except the cornstarch and water.. Pour over the chicken. Bring to a boil

4Reduce the heat and partially cover the chicken and cook for 45 minutes. Rmove the chicken to a plate. Stir in the cornstarch and water and cook until thickened.

5Serve the chicken with the sauce accompanied by rice and bet.
