Ingredients For braised chicken thighs in oyster sauce

  • MARINADE
  • 2 Tbsp
    soy sauce
  • 2 Tbsp
    rice wine or saki
  • 1 tsp
    toasted sesame oil
  • 4
    whole scallions chopped
  • 4 clove
    garlic
  • 2
    inch piece of ginger cut into slices
  • CHICKEN
  • 6
    bone in chicken thighs
  • 10
    dried black mushrooms steeped in hot water for at least 20 minutes. drain
  • BRAISING SAUCE
  • 1 1/2 c
    chicken stock
  • 3 Tbsp
    oyster sauce
  • 3 Tbsp
    rice wine or saki
  • 1 Tbsp
    rock sugar
  • 1 tsp
    cornstarch mixed with 1 tbsp water

How To Make braised chicken thighs in oyster sauce

    Mix the marinade ingredients together and add the chicken. Rub the marinade over the chicken and let marinate for at least 60 minutes.

    Transfer the chicken to a Dutch oven or clay pot. Arrange the mushrooms around the chicken.

    Mix the ingredients together for the braising liquid except the cornstarch and water.. Pour over the chicken. Bring to a boil

    Reduce the heat and partially cover the chicken and cook for 45 minutes. Rmove the chicken to a plate. Stir in the cornstarch and water and cook until thickened.

    Serve the chicken with the sauce accompanied by rice and bet.
