I found this recipe on Bigoven.com via Pinterest & it is AWESOME. It's pretty quick & easy too. It's like teriyaki chicken, but different & my family thinks it's even better. I serve this over brown rice & sometimes add some peas to the rice. I also double the sauce, as we like lots of sauce for the rice, but you have to be really careful because too much sauce is over powering in flavor. You have to put just enough to coat the rice lightly.

Ingredients For bourbon street chicken

  • 3 lb
    boneless chicken breast, cut into bite-sized pieces
  • 2 Tbsp
    olive oil
  • 2
    garlic cloves, crushed
  • 1/2 tsp
    ginger
  • 2 Tbsp
    cornstarch
  • 1 tsp
    red pepper flakes
  • 1/2 c
    apple juice
  • 4 Tbsp
    ketchup
  • 2/3 c
    light brown sugar
  • 2 Tbsp
    apple cider vinegar
  • 2/3 c
    soy sauce
  • 1 c
    water

How To Make bourbon street chicken

    Heat oil in skillet & add chicken. Cook over medium heat until browned. Remove chicken from skillet & add remaining ingredients, heating over medium heat until well blended & dissolved. Add chicken back to skillet & bring to a hard boil until sauce is thickened. Serve over rice.
